Buckwheat safe?

does Anyone know if buckwheat is safe? It says on whfoods.com that it containS 100mcg lutein and zeaxanthin...

I don't know, Anna, but I was just going to post something about bread flour when I came upon your post. It seems that per cup, bread flour also has 100mcg lutein and zeaxanthin. I looked it up because I have been making bagels for myself and started experiencing extreme dry eye (to the point of pain and dry spots developing on my eyes) within minutes of each bagel I ate. This is the exact reaction I used to get when I ate high vitamin A foods. I don't know if I am more sensitive or what, but for now I cannot eat bread flour, and I would bet the same thing would happen If I tried buckwheat.

I can eat pretzels made with white flour (less lutein/zeaxanthin) with no problems.

I dropped Oats and breads as well, was getting negative symptoms.

Buckwheat may cause issues for some who need lower levels to deplete stored VA.

Buckwheat per 1 cup whole groat flour:

Vitamin A 0.00 IU 0 %
    Vitamin A, RAE 0.00 mcg
    Carotene, alpha 0.00 mcg
    Carotene, beta 0.00 mcg
    Cryptoxanthin, beta 0.00 mcg
    Lutein + zeaxanthin 264.00 mcg
    Lycopene 0.00 mcg

Oh my, just dont know What to Eat for breakfast and snacks anymore. Have Rice meat and beans for lunch and dinner but am just no totally comfortable with one more Rice meal a day with regards to the arsenic... also i have oatmilk with honey as an evening snack...

any suggestions for breakfast and sweet snack?

Try eating stewed pears or apples(like a compote in wine or a jello base if you like). Almonds and raisins make a good snack as well.

You can make rice more interesting by turning it into a tasty, chewy porridge. I like to use longer grains of rice that are presoaked. Toast the rice lightly in oil(this improves the texture of rice), then add water(1.5 cups of water for 1 cup of rice). You want to keep the rice a little chewy. Bring water to boil, then lower the temperature and cover). Gather your favorite dried fruits, sugar, cinnamon, almonds, and prepare to add them in at a later stage. Once the rice is cooked, add in the other ingredients, and fluff up the rice with a fork. Once the porridge is in bowls, you can add honey or maple syrup.

Anna, can you eat wheat or potatoes? I cook potatoes in oil, or sometimes even eat snacks like pretzels or chips for breakfast. Not typical, but I like it. Some cereals are okay with me too (I eat them dry - no milk).

I'm trying to stay on the very low with vitamin-a and as I Understand fruits do contain some so tasty as those fruits sound I'm not sure I could do it. Had three Apples in total yesterday for the first time since starting this diet about two months ago, and got a severe headache...also cinnamon is pretty high in vitamin a.

 

the chewy Rice sounds Lovely though😋😋

and Eliza I dont Eat gluten but I do Eat potato so yes Perhaps I could switch between Rice and potatoes for breakfast😊
