Carotenoids in potatoes (white, yellow, or purple flesh)

I recently had to move in with my girlfriends parents while we are renovating our home. 
So right now I'm not following my diet and all of the cooking is done by my mother in law. 
And she's making potatoes(the yellow kind) almost every day.

How bad is it in terms of vitamin-A. 

I used to think potatoes were low VA. But in light of this recent research. Are they now high, medium, still low?

How bad are potato chips? Did they turn out to be high VA too

If the potatoes are yellow there is some lutein in them. If you eat the potatoes boiled by themselves they might be fine, since carotenoids need fat to be absorbed. Potatoes have close to zero fat in them. I have eaten yellow flesh potatoes without any other foods or fat present and I didn't get a negative response. But if you eat the yellow flesh potatoes with butter, oil, fatty meats, or as part of a meal with other foods containing fat you are going to absorb the lutein. Potato chips usually have oil added so I would not take the risk.
