Coconut milk/oil

I’ve read that we should avoid coconut oil and milk bc of palmitate. Is this true? How is palmitate related to VA?

Retinyl palmitate is synthetic vitamin A, most coconut milk and rice/soy/almond milks for example are fortified with it, just check the labels.

I only eat actual coconut oil or canned coconut milk - not the dairy alternative milk drinks. So no fortification.  Is that safe?

Yes those should be safe and are free from vit A,  some have mentioned that the fatty acids in coconut affect them during detox, so go with how you feel.

Some people get VA symptoms from stuff like peanut oil, coconut oil, palm oil, beef fat etc. even though these foods have very little or no VA. Some people do fine with them, some do fine with some of thse foods but not with others. Probably some fatty acid like stearic acid or palmitic acid is to blame, they interact with retinol somehow. I think this is true because I can't eat coconut oil but I can eat MCT-oil which is made from coconut oil, the bad fatty acids have been removed from it.

What about rice milk? Is that problematic because of resistant starch? What other milk is OK in coffee?

Almost all stored bought rice milks are fortified with VA palmitate.   But homemade might be ok?

 

I have been having a hard time getting coconut oil to work for pie crusts in the summer time, but not in the winter time.  Then, I finally read the label.  It said:

If replacing solid fats in a recipe, measure the coconut oil in solid form

If replacing liquid fats in a recipe, measure the coconut oil in liquid form
