Corn didn't turn out white enough

Truckers White Corn Seeds

This is the photo that the seed company put out.  If you look hard at it, you can see that there is still some blush on the niblets.

I made corn bread today and was unhappy to see that there were specks of orange.   GRRR

This corn was called "Truckers Favorite White" and it is a flint corn.

Now I've for sure bought white corn meal that was completely white.    I guess I'm going to have to find out what type that is.  I do wonder if it might have had to do with the way I grew it, though.

Back to the drawing board.   If I'm going to the trouble of growing corn, it damn well better be WHITE!

I know corn could have moderate levels of lutein in it but I wouldnt be concerned about it. If you're sharing with family then you're not eating much every day. The important thing is improving choline levels and improving absorption. I did 1-2 eggs throughout the detox but it was only when I reached 4 eggs that some sort of replenishment took place. My absorption improved. I no longer needed zinc every day. So my point here is that sufficient choline and betaine far outweigh any small amounts of beta carotene and lutein. Enjoy your corn bread. We still have some people reacting to very small amounts of lutein and hopefully we can eventually figure it out. Better absorption and fixing leakiness may be key.
