Could Cheese Every Even Possibly be Healthy?

I ask this question because, as I gradually diversify my family's diet, with the intent of staying low A but including other nutrients easily lacking in a restricted diet, each family member also has foods they miss. And since I want to maintain this for the long term, and also encourage my kids to be compliant even when they have the choice of A Thousand Temptations outside of my kitchen, I consider these types of questions! We've been eating some organic yogurt and a whole egg each every day or two. I am trying to cook beans incredibly thoroughly and also somehow temptingly...but these are not the favorite menu items thus far, although we're having some each day.

One child would LOVE some pesto, with lots of green basil. Another child would like avocados. One wishes for watermelon and mango (waaaay too high, but they wish for this...) Yet another child longs for a little taste of tomato sauce, and I...would love some sharp cheddar cheese!

As I look ahead to what a Low A diet means in the long term, I wonder what others have decided to do or are experimenting with.

Could cheese ever be healthy??

We are 4 and a half months into this very low Vitamin A diet.

Apart from the improvements and problems we have noticed, there is a large shift going on.

We do not crave the foods of the past. Both of us come from different culinary backgrounds and we had fond memories of certain foods. 

Now you could not pay us to eat theses foods. Ok, you could, but it would have to be a huge amount of money, let's say life changing money! In fact when considering the fond memories of bowls of salmon eggs, thick slices of foie gras, heaps of fresh pasta with home made pesto, avocados etc, the memory of all this is very strange. It is as though we had been bewitched into thinking all that was nice and good. I recognize that bewitched state, a kind of addiction, a path to destruction I now realize.

We do not desire any of this anymore, and have other more delicate pleasures.

The smell of good rice cooking... I had a friend who told me that when eating bread in her village they could tell exactly which field the wheat had grown in. I did not find this incredible because in my country you can immediately taste which kind of mineral water you are being served.

The intensity of the perception of rice/beans etc smells is growing more and more. 

I think that after a while the problems you may have with memories of perceived good foods might just disappear.

 

As to whether cheese is healthy or not, I used to hate it, and never ever had any before I was 50 years old, when I ended up having yoghurt (home made from organic ewe's milk: now I realize the worst I could have done in terms of Vitamin A content). You could say that until  reached that age I had not drunk 5 pints of milk in my whole life.

Then the trouble started, on the well meaning advice of my doctor : At your age, you MUST drink milk, eat cheese etc.

Cheese is just a way to preserve milk.  It is also a way to fill you with bacteria that might protect you against worse bacteria. For me it was not. good idea.
