It is quite low fat right now, I might try spreading a small amount of beef tallow on the sandwiches and see how that tastes.

Just a warning for beef tallow. Beef fat contains lutein. It might only in small amounts, but if you experiment, please be aware that this could cause problems.

People on the forum generally use olive oil or sunflower oil.

Thank you. I'm not aware of any carotenoids in beef fat, do you have a reference for that?

I know Garrett Smith says that stearic acid can amplify retinol toxicity.

All I could find was this paper: https://www.tandfonline.com/doi/full/10.1080/00288233.2011.636061

0.08 mcg/g is really low and wouldn't be much of a problem if not sensitive to it.

Cheers!

I put some tallow in my sandwiches today and it tasted fine.

As indicated by the study, if the fat has a yellow colour then there is a small quantity of carotenoids.

The tallow I have is grass fed but certainly doesn't have a yellow colour so will have practically nil lutein and beta carotene.
