German cucumber salad

For a family of four you will need 6 cucumbers, and a small onion and don't worry it does keep a few days if there are leftovers.

Peel the cucumbers and either get out your food processor that slices, or a good knife.    Slice the cumbers and onions very very thinly.   This can take a little while by hand but comes out just as good.   

Toss the veggies with a hefty amount of salt.   When you taste them they should be very salty.   

Leave on the counter for a half an hour until the veggies release a bunch of fluid.    Wash your hands well and take handfuls of the veggies and squeeze them out like a sponge placing them in a second bowl.   I sometimes keep the salty cuke water because I bet it has some nutrients, and take a swig now and then.    I strain it into a canning jar and refrigerate.    Useful to put into a homemade rehydration formula or maybe a cucumber fancy drink.

For dressing, toss with:   about a tablespoon of mayonnaise, a small sprinkling of rice vinegar, a bit of sugar (1/2 teaspoon or so, this is the "magic" ingredient), a little bit of dried dill.
