Thank you for that information about carrageenan. I live in the USA and almost all ice cream sold in groceries contain carrageenan. There are very few brands that don't. I don't know about soft serve versions at restaurants and fast food places. In my area all whipping cream sold in stores contains it.
I do eat some things with guar gum in the ingredient list and don't seem to have trouble with it.
