maple syrup

Let me preface this by saying I really don't (didn't?) ever have much of a sweet tooth.   I'm a salty girl all the way.

But lately, (month 7?)  I'm super addicted to maple syrup.  The google machine tells me it has lots of good things that we perhaps need?  (Manganese Zinc Calcium Riboflavin Magnesium Potassium) I do wonder if there is some trace element in there that I need, because I can't get enough of the stuff.  Sometimes nutrients from (deep rooted) TREES are more diverse than those from (shallow rooted) annual PLANTS. 

Now, you could say I've developed a sweet tooth or need calories, but I'm not attracted to other sweeteners, just this.

Maple syrup is an amber color so sometimes I worry that eventually I'm going to find out it has carotenes.  I'm hoping those carotenes mostly fall in the orange leaves though, long before sugaring time.  My naturopath told me that native americans considered the fresh sap to be a spring tonic.

Real maple butter (creamed  maple syrup) is divine on toast, and will keep you from missing dairy butter!

Would the sugar in the maple syrup not slow down the ALDH and detox systems or affect liver?

Makes sense! I’ve been eating molasses for the same reason. It’s got a lot of iron, which I need.
