The liver is the body’s primary detoxification organ. Therefore, depending on the animal, and the life conditions of the animal, the liver is probably chocked full of toxins. Think of the liver as the body’s trash can, and sophisticated toxin disposal processing organ. To a far lesser extent you can probably have a similar view of the kidneys. By eating these organs you are potentially taking on the accumulated toxic load that the source animal was originally trying to dispose of.

I want to say that some have claimed that the "trash can and toxins" concept isn't accurate. This is one of the reasons I continued to eat liver every couple of weeks for years (sometimes inconsistent thank god). I believed the liver was helping me not see the dentist. (Rami Nigel, Weston A Price etc) Well, it worked, sorta. Whenever a particular molar I have gave me pain, I ate liver and it always made it go away. I havent been to a dentist in over 10 years. Well, if anything is the body's trashcan, it's the colon. That part specifically stores toxins and wastes that are soon eliminated from the body. Calling the liver the body's trashcan is actually pretty insulting to this vital organ. Not only is it responsible for detoxification, it also produces important proteins, converts inactive thyroid hormone to the active form, and stores vital vitamins and nutrients so the body has an adequate reserve.
It's the body's chemist, not a trash can.
