@lil-chick: I'm curious about your 3-day bread. Is that a 3-day rise time with sour dough? I've only made a simple white bread on the weekend because we ran out, but I'd like to bake more often.

Here is the recipe that I began with.    I don't have a Dutch oven, so I use just a covered casserole dish.    Because it is much thinner than a nice heavy Dutch oven, I put an insulated cookie sheet under it to protect the bottom from getting hard.

It is very simple and fast, it isn't quite as wonderful as kneaded bread, but the ease of it makes up for that!

Thank you! That sounds like a very interesting bread to try, esp. with the long fermentation time. But this also means that you can kind of bake it on the day you want, with some flexibility.

I'm a bit under the weather right now, but I'll give it a try.
