What beans/legumes are safe to consume?

I love beans. They taste great, provide nutrients, have some decent protein and are very cheap even if you buy them organic (which you should anyhow). And since going low VA, they don't give me any digestive trouble at all, in contrast to my former vegan days....

But I am unsure which beans are actually OK to consume. I currently eat the whitest canned beans I can find in my supermarket here in Europe (without tomato sauce of course), but I am unsure about their carotenoid content. I also read somewhere that Pinto Beans are 0 VA and I saw some people here mentioning they consume black beans.

Anybody got more informations perhaps?

 

I also love beans and eat them  daily - about 100-150 grams.

Almost all kind of beans are low in VA, except green beans, peas and peanuts.

I would also recommend to get the dried beans and put them into water over night and then cook them.

The canned beans are high in resistant starch (get cooked multiple times and cool down) and that is a problem with the VA Detox.

 

Oh, they actually heat canned beans multiple times. That makes them much worse than I thought.

No wonder my body loves the beans I cook even reheated once way more than the canned ones.
