Potatoes I steam cook three times a day in Instant Pot and I always peel them after cooking. 

Red lentils I boil the whole amount every morning.

Black beans in Instant Pot whole amount every morning

I eat steamed cabbage twice a day 150g at a time.

Hemp seeds I buy whole, 10kg bag at a time and I grind them myself in a spice grinder. I just put ground hemp seeds in my mouth with a spoon, chew them and swallow and drink water after. I don't add ground hemp on my meals because I find it very hard to chew food when it contains ground hemp. It's easy to eat ground hemp on it's own and drink water after.

Funny thing, I first bought hempseed oil and I got chest acne from it. Then I bought whole hemp seeds and no adverse effects. So the oil must have been rancid or something, or my body doesn't like it because it's not natural to drink isolated oils.  

Oh and I use 1ml of salt three times a day on my meals. I don't use any other spices. Every food tastes great to me, very strong taste and appetite. So no signs of zinc deficiency.

WOW that is A LOT of oxalates and copper and fiber LOL. Can't imagine eating this diet.. I would be just bloated and hungry.. I need animal foods..

If you read my first post, I said that I'm not here to debate about different diets. I don't care what you think of my diet and I don't have any need to push my diet on to you. So please keep your unintelligent comments to yourself. Sorry, this was the nicest way I could say it. I'm also not here to seek any help with my problems, I just wanted maybe some human interaction because I have been alone for so many years now. I have read this forum for years and I can say that there is not a single person in here who I think has any real intelligence to be any use to me.

There could always be some surprises around the corner and thing that we maybe thought we know but we dont 😉

At least life is way funnier that way.

I have to say I appreciate everything personal that people share here, also your diet @arket. Its a fascinating crazy potato diet to me 🙂 🙂 and I am very curious if it will help your issues.

I can second this: 

I unironically recommend a good cognitive behavioral therapist. They are wonderful at helping you practically figure out how to live a joyful life despite setbacks. Nutrition will not solve all of life's bruises and ailments, not by a long shot.

Reading this book can make all the difference: Feeling Good by David Burns. A treasure trove of applicable knowledge.
