Why wouldn't you use it as a food, because of carotenoids? Even the darkest honey is low vit A. Based on some very rough calculations I did the darkest honey might have about 50 IU per tablespoon. I'm happy to go into it in more detail if anyone is interested. I just don't see much point in trying to avoid vit A to this extent.

I consume honey and I prefer it over any other kind of sweetener or calorie filler mainly because it doesn't make my teeth hurt, unlike maple syrup or table sugar.
