Breakfast pizza, a lower-egg idea
Quote from lil chick on November 11, 2025, 6:22 amSome here may not be eating eggs, this recipe isn't for you! This recipe is for those who may be cutting back. It might also work for egg-whites.
My husband came up with this for overnight guests, I can only guess at the recipe as he keeps things top secret, LOL.
You buy large fajita wraps that fit your skillet to a tee. This is important, as you want all the real estate covered. Warm your skillet up. In a bowl beat an egg or two then add whatever you like with them (such as mini bits of onion, chopped ham, mushrooms) and of course salt and whatever other seasonings you like. Swipe the pan with a your choice of fat and put the wrap in the pan. Carefully pour the egg mixture on top of the fajita and spread it around so it evenly covers the fajita. Place the lid on the skillet and cook the egg though. Get the "pizza" out of the pan and onto a cutting board, cut it up into slices and serve. Cheese is a welcome addition for those who dabble thereof, and for guests.
It's a fun food you can eat with your hands...with a nice, crisp texture. Would probably be a good commuting food.
