Carbs that don't cause inflammation?

I'm really struggling, hope someone here can suggest something to help me out.

I was carnivore for 3 months, then keto for 1-2 months, then transitioned back to high carb since September 2018 to heal from low carb. It's been 8 months since, and while my body is able to utilize the carbs for fuel (I can feel it refilling my glycogen), it has negative mental effects (brain fog, fatigue), and physical effects (internal hemorrhoids, and psoriasis).

My research into healing my psoriasis led me to looking more into vitamin A toxicity.

Here's what I've tried so far:

Cane sugar: makes me itchy!

Brown sugar: when I drink this in warm water (like about 1/2 tsp), my face starts clearing up (yellowish/dull -> rosy/healthy). In higher quantities, I get very bloated and a little constipated.

Honey: tried raw honey, and pasteurized honey. My psoriasis gets worse with raw honey, and gets itchy with pasteurized honey. Sometimes I tolerate honey in drinks.

Oats: I used to eat it every day for breakfast. Then started to make my bm's a lot harder, so I cut it out.

OJ/fruit juice: I've started to try pineapple juice, but I can't tolerate it in amounts more than 1/4 cup. It makes my psoriasis patch itchy. Same with most fruit juices.. ITCHY!

Sushi rice: this seems OK (I have no flares eating sushi), but I really don't want to be eating sushi rice all day! It causes me to put on fat in my mid-section.

Glutinous rice: I get so indigested eating this. My stomach aches for DAYS.

Basmati rice: I feel some inflammation from this (organic btw). Like a kind of brain fog. It's also unappetizing.

Jasmine rice: After going gluten free, this is all i've been mainly eating (well and rice noodles). But I feel this weird drugged feeling like I'm emotionally numb. I usually eat this cooked fresh, but sometimes I leave it for about 24 hours in the fridge - and I get very depressed. Definitely reacting to the resistant starch! But the good thing about jasmine rice is, it doesn't make my psoriasis worse. It does seem to cause some intestinal inflammation though (the internal hemorrhoids).

Pasta: I can't digest this at all, and I get zero energy from it.

Potatoes: tried all kinds, russet potatoes, red potatoes, white potatoes, yellow potatoes, purple sweet potatoes. Worst reaction with russet potatoes, I get so itchy. Only time I seem to get any benefit is eating them post workout, i.e. it actually seemed to be absorbed right away and my brain would light up. All other times, I'd get foggy and itchy.

Potatoes with coconut oil: 100x the itchiness + skin redness. I react to coconut oil bigtime, even coconut water.

Paleo carbs (taro, potatoes, squash, cassava, yams, sweet potatoes, carrots, jasmine rice only occasionally): I loved this for bm's, didn't feel inflammation. Even when I had bleeding hemorrhoids one time due to lifting at the gym, it healed within 2 days.

But it made my psoriasis get SO much worse! Back of my neck was itchy, inflamed, red - even if I didn't eat anything processed the entire day (mostly carbs, random veggies, 2 fruits I tolerate, meat, no dairy).

White bread: I don't feel great with gluten. I just feel better overall going gluten free.

Quinoa: I can feel my transit time slowing down when I eat this.

Sorghum: this was a disaster. It made me so constipated and my body ached so badly.

Millet: my mother eats this. It doesn't taste good, and I also read that it was bad for the thyroid.

Buckwheat noodles: I find it hard to eat large quantities of this. Plus it makes me sleepy.

Beans: Red beans makes my skin flare like crazy. Pinto beans are really tasty but I get a headache after. Haven't tried other varieties... beans don't make me feel great (only in small quantities).

Mung bean: I have to eat A LOT of this to be full. Also constipates me.

Lentils: I like lentil soup. I might try this again, but never tried making this a staple.

Chickpeas: these are okay... I eat them sometimes, but I'm not really sure if this is good to eat in large quantities.

Brown rice: I have not tried making this a staple, but don't think it's healthy to due to the phytic acid.

 

I've cut down on higher vit A veggies and feel better, but there's that emotionally numbness/apathy/skin issues that make me think there's something inflammatory going on. I feel it's the carbs, as I felt no inflammation whatsoever on the carnivore diet.

I don't feel any better eating just a carb and protein with no veggies.

But I'm not going back to low carb as I lost my period when I was below 50g of carbs.

What should I do?

How long did you try each one of them?

You might have to give some time for your gut biome to adapt to a higher fiber intake. I would probably stay away from what flares up your psoriasis, but those that constipated you might be worth trying for a longer period of time to give your body time to adjust.

Also, how often/how much do you eat? Eating smaller more frequent carbs meal can help with constipation and hormonal balance, but you have to give an honest go. Eating starch every 2-3 hours from waking up until bedtime can be a hassle, but it seems to be helping me. I think this is important for anybody that needs to heal from undereating/low carbs. Low calorie is really a recipe for hormonal disaster.

I had trouble getting my period back after breasfeeding because I was "clean eating" with low to no processed foods and added sugar. It came back when I started to eat more frequent and way more calories. I also put on weight, but that was needed weight in my case.

You mentioned that glutinous rice made you put on weight in the mid section. In myself, a midsection fat increase means I'm eating something that's not tolerated by my body. Your body stores extra calories as fat when something is going wrong in the body.

Wonder if extra B1 thiamine HCl and B2 riboflavin to push sugar and fat metabolism would be helpful(100mg of each couple times per day).

Taking extra magnesium should help keep things moving.

I found even 120g/day of canned beans (black beans) gives me painful BMs, sometimes bleeding, and rectal pain throughout the day.  Definitely larger amounts cause me mental health and sleep problems.  But introducing beans did seem to improve my cognition a couple times, and completely stopping beans seems to restart my post-meal brain fog/nap -- perhaps because the fiber was helping to absorb/detox? -- so I'm going to reintroduce smaller amounts of canned beans.

Perhaps you benefit from small amounts of fiber.

There are only two times in my life when I've gained weight quickly and it was scary fast -- 124 lbs to 136 lbs in only 7 days.  I actually put on belly fat for the first time.  Both times happened when I ate most of my calories from white rice with fairly low percent from fat.  Yet I'm still on a high-rice (around 1000 kcal/day) diet now (although with high fat as well) and I haven't kept gaining; I lost about half of my belly fat.  Perhaps it's the logical opposite of rapid weight loss that people experience starting low-carb -- in which case, it might stop after a couple weeks.

Or perhaps if you're on a low Vitamin-A diet, high-carb won't lead to weight gain in the same way it did before.  See Grant's post at https://ggenereux.blog/2018/10/08/obesity-causation/

Over a couple years I've noticed some nuances about how rice makes me feel:

  • Precooked rice seemed fine for months but now causes mild pain, brain fog
  • 1+ day old refrigerated rice probably was a problem
  • slightly burnt/hard/overly-dry rice seemed to cause discomfort a couple times
  • eating lots of rice quickly without chewing might have caused problems
  • cooking rice without enough water might have caused problems
  • leaving leftover rice in rice cooker, even overnight at times, seems better than keeping rice cooker heated, which dries it out.

Perhaps you might benefit from less amylose and more amylopectin in rice, with the theory that it's more digestable than long-grain or jasmine rice.  But you said glutinous rice was out.

I currently eat medium-grain rice and some amount of black beans for my only carbs.

I eat brown rice w/ chicken breasts twice a day. Doesnt have any negative effects on me

Hi Peachy,

It could be you have a problem with grains and beans  because they contain proteins that increase intestinal permeability and cause leaky gut. All grains have some form of gluten-like protein and beans are very high in lectin proteins. I became gluten intolerant and finally had to cut out all grains, even white rice.  Potatoes can be problematic because they are in the nightshade family and contain solanine. I can't eat potatoes because they cause me joint pain and inflammation.

Try celery root as a non-inflammatory carbohydrate source. I also eat peeled pears for additional carbs!

Do you think it's possible your ketogenic diet made you tolerant or resitant to VA toxicity? Or made you handle it better in some way

What should I do?

Are you saying that you didn't have the typical VA toxicty symptoms of psoriasis, brainfog, and fatigue, while eating a ketogenic diet? I don't know what you were eating but I would assume you ate plenty of VA at that time, most ketogenic diets are very heavy on VA. And when you started eating carbohydrates then VA started causing all these bad effects?

Peachy, do you know what dosha you are in Ayurveda? This could help you figure out which foods will agree with you best. It helped me a lot.
