I'm of the opinion that animal fats are healthy. I could be wrong, however, if all farm animals these days have VA overload, LOL.

Anyways, I don't think we know everything about animal fats.  I think it is interesting that this vlogger talks about the kidney fat being completely different from the muscle fat.  It is harder at room temp and tastes different.  The *kidney fat* was the type that was specially saved.  Of course, muscle fat was eaten in conjunction with the meat.  But the fat used in baking and cooking was special.

There certainly is a long history of people utilizing the animal fats of both farm and wild animals.

suet:  "used in puddings, pies, dumplings, in pickling and preserving (on top, to keep air out), deep frying, grilling... soap, salves, medicines...an important part of 18th century food ways and life in general..."

I think what I want to say is I'm just done with all the different theories about fats and want to get back to what we used to eat before the theories. 

I went to the grocer and found zero products that were just lard.

Excellent science article by heavyweights including Ravnskov and Kummerow refuting health authorities' delusional love of PUFA and fear of saturated fat.

The vitamin A thing makes me think that docs MIGHT have been putting two and two together (that butter, eggs, liver could have a bad effect).  And then, woops, they blamed it on the cholesterol and the sat fat, instead of on the VA (which is, for some reason, always above reproach).  And I can see now why SOME people have told me they do much better following the docs rules about sat fats.  But I've always thought it was illogical that fats more like our own would be bad for us. 

edited to add:  IF we could find a way to raise chickens and cattle that their VA didn't rise, I bet these foods would be amazingly beneficial.  There must be a reason why butter tastes so great!

edited yet again to add:  my chickens are much healthier now on their lowered VA diet.  Even the oldest, lame one is getting around better.
