Regarding water - you ever considered cleaning it, like distilling it or reverse osmosis? Lots of things in water that should not be there besides copper, like hormones from birth control to mention one.
Thanks @bludicka. That is interesting infornation. Coffee enemas daily for 3,5 years?! yikes 😳 Mercury i am instantly thinking of fish. Copper, yes chocolate and veggies. All three were my staples for years and years and probably for others in here too. And with endometriosis, i def have estrogen issues. Really should get around to do a hair test. Have been thinking about it for years. That and a DNA test to find out my genetics regarding metabolizing estrogen and other things. Seafood is very healthy if it is low VA and low mercury. There is a lot of low mercury seafood but only a small selection of low VA seafood.

One large potato (also high oxalate) has 0.5 mg - 56% daily copper and only 0.8mg - 7% daily zinc, if the copper/zinc theory is correct then it doesn't look great but I guess it's just a matter of avoiding over consumption.
One other thought re copper: Copper sulfate is used extensively in organic farming, I wonder if organic food is generally higher in copper because of this.
Re seafood: Just walking down a busy street and breathing the air gives you a lot of pollutants, I'm not discounting toxins in seafood (I never ate any tuna before low VA diet due to mercury) but there is a lot of variability of pollutants in different seafood and seafood is among the most nutritious and healthy foods we can eat. If you are going to worry about arsenic then you would never eat any rice among other foods. Also, man made mercury pollution is not the main cause of mercury in seafood. Underwater volcanoes supply most of it and seafood has always had mercury in it.

Arsenic in rice is a problem, I soak the rice and ferment it for one-two days, this can reduce the arsenic content....
