Kefir sounds interesting. I brewed some back in my almost vegan days, but stopped because it gave me the runnies. Not sure if the cultures just triggered some reaction (VA?), or if it was some kind of SIBO.

I think the 24h variety (liquid, bubbly, white) was nice, but often I'd just leave it longer (I couldn't/wouldn't drink as much as I made) and it would separate into clear whey-like liquid and white kind of soft cream-cheese crumbs. Never tried the "cauliflowers"/grains. I was afraid they'd really mess up my digestion.
