Oil for frying, white beans
Quote from grapes on June 8, 2020, 10:25 amWhat oil do you use for frying meat ? I currently use sunflower (only mention on the bottle "bio" ) Supposedly (have seen on another site ) Grant says that vitamin E increases serum retinol content. Would it be better in terms to vit A detox to eat only boiled meat ?
Another question, what about white beans , do you eat them? There are no black beans sold here. I like white beans but they are more or less rich in iron and copper and I'm concerned about that (especially iron).

Quote from puddleduck on June 8, 2020, 11:26 am@grapes I eat most types of legumes, except for red lentils and split peas, and tollerate them well. 🙂
The soluble fiber in the legumes reduces the absorption and bioavailability of vitamin A, so that makes me less concerned about small amounts of carotenoids found in them.

Quote from lil chick on June 8, 2020, 11:26 amFats are puzzling and I think there are several routes being tried based on your beliefs.
I'm pretty sure Grant has mentioned he slow cooks his beef, and that might be a tried a true way to go. Probably no fat needed.
Just now, I made some meat balls and used a little bacon grease, but I'm a bit of a rebel and haven't yet given up on pig fat. One of my other main fats is refined coconut oil. I put olive oil in my salad dressing. I'm not above a tiny scraping of butter on a piece of bread just out of the oven (as a treat). But normally I'm eating my bread dry.

Quote from puddleduck on June 8, 2020, 11:35 am@lil-chick I could go for some slow roast beef right now! Delicious.
Grapes, I cook with coconut oil, olive oil, and sunflower oil. Some people have a hard time with oils, and do better with less than more. For myself, I have not noticed a big difference either way.

High oleic sunflower oil would be ok but the standard stuff will form a lot of oxidized PUFA. I use light olive oil, it has less olive oil taste and is low in PUFA for a vege oil. Lard and beef tallow are also good options but they will form oxysterols. From a health perspective coconut and refined palm oil have the most stable fats without forming oxysterols.

Quote from Jiří on June 8, 2020, 11:29 pmIf there are some foods that I don't wanna eat ever again then something fried in vegetable oil is definitely one of them.. Even frying alone is far from healthy method of cooking. I think it is one of the reasons why meat can be unhealthy. It is not about the meat alone. It is about method of cooking and what you eat with the meat.

Yeah, the aldehydes made during frying are a concern:

I do not know if there are as many aldehydes made when coconut oil is used for frying though? I do know it is more heat stable, at least, so that is what I use for sautés and pan frying potatoes or pancakes. For baked potato wedges/fries, I use Olive Oil (which produces less aldehydes than sunflower when used in a deep fryer, which is hotter than an oven anyway 😝) or Coconut Oil.

Quote from r on June 9, 2020, 6:40 amThe traditional method of cooking meat has always been boiling it in a pressure cooker , buy a cheap pressure cooker put your meat in it and boil it or slow boil it for 3-4 hrs . It preserves the taste and it easy to cook . Pan frying always gave me issues .
I would out bit of garlic before adding beef , add a little bit of olive oil , little bit of Tumeric and mint for smell . and then boil the meat in it with lot of water in it. Add gelatin cuts like shanks or oxtail will give you collagen . and later you can drink the soup with brown rice .
Trust me with this method you will lick your fingers. It gets so tasty . This is how we cook in Kashmir .Safe and nutritious .

Quote from Jiří on June 9, 2020, 8:38 am@puddleduck vegetable oil alone is a problem. Shouldn't be used at all and frying even on coconut oil will create some oxidized fatty acids, carcinogens and acrylamide. I understand why people like to eat fried foods with a lot of acrylamide in it. It tastes much better, the food has better crunchy texture etc.. But people need to decide what is more important to them temporary pleasure from food or long term health.. Most average people choose temporary pleasure and then they are really surprised when their body doesn't work or look how they want.. People with self discipline and goals look at food as fuel and tool that will help them stay, healthy, have energy and reach their goals. You can see it in athletes, actors etc.. I am lucky that I was doing bodybuilding. So I view food as fuel and tool to reach goals for a long time. I can't imagine choosing my diet what taste good like "normal" people.. I would be 200kg with 1,5m waistline lol. 😀
