Pecan Pie

It's that time of year. Just coming home today I saw two pickers; one of my neighbors even had a fancy rolling lotto number basket on a stick thing with which to collect the nuts without stooping. I have way more than I need from my trees and plan to make pies. 
I've done it before and it was always low A excepting the butter and egg yolks. I'm planning to substitute butter with coconut oil and discard the yolks, so my basic recipe will be:
Flour, honey, salt, pecans, egg whites, coconut oil. If anybody has improvements on this platform I'm all ears. The internet is strongly suggesting maple syrup in place of honey - we shall see.

I've never made a pecan pie, but my vote might be whatever my SIL puts in, which is I think bad-old corn syrup haha.   I do love maple syrup though.   Honey is so perfumey.    (and this is from an ex beekeeper).    The flavor note I want is caramel. 

Pecan pie is the bomb.

Lately my thoughts turned to another holiday nut:   chestnuts.   I waxed on about them here and decided to make them their own thread and not be a detriment to your pecan pie topic.

I talked with a poker buddy last week and asked his thoughts, him being the finest chef our little group has. I asked if he would add vanilla. He said maybe some rum or bourbon, depending on what he had on hand. This surprised me, but he reminded me that vanilla is also an alcohol.
My grandma's recipe used karo syrup. I'm leaning toward maple. 
Why did you give up the bees?

Hi Joseph, bee keeping  was more husband's dream than mine, and he's a busy guy.    It's pretty challenging.   We got some experience with it and it was fun for a while, but eventually we just stopped replacing dead hives and the hobby had run it's course.   I have this hope/ idea that maybe we will find hobbies that are a bit less work for retirement.   (but that doesn't sound like him haha)

It is done.

The crust:
1 1/2 cup whole wheat flour, 1/2 cup coconut oil, 1 tbsp honey, 1/2 tsp salt - pulsed in food processer
Then ran continuously while I dribbled in 1/2 cup cold water (add until mixture becomes a ball in the processer)
Rolled out on floured marble with my hand carved white oak womping stick
Transferred to deep pie plate
The mixture:
1 1/2 cup fresh picked off the ground and rocket cracker'ed pecans
6-7 eggs worth of egg whites (gave the yolks to the chickens)
1 cup maple syrup (dear God it was expensive)
1 1/2 tsp vanilla (Jesus wept copiously)
1/4 tsp salt
Whisked this all up in a bowl while the toaster oven preheated to 350
Sat in there 30-35 minutes

It smelled breathtakingly beautiful when it came out of the oven but I won't try it until tomorrow. Tis my contribution to my sisters Thanksgiving dinner. I will say that the egg whites smelled disgusting to me as I separated them from their yolks, but then I haven't cracked an egg in 7 months and a lot with my body has changed.

Ok, why would the Son cry over vanilla?  Was this something He wished the 3 kings had brought instead?

@Joe2 because real vanilla costs a million gajillion dollars for an eyedropper's worth!
@lil chick look into hobbies that aren't so consistently demanding, like ones where you aren't creating new mouths to feed. Personally, late in life I've gotten into basic woodworking and leatherworking. I can take all the time in the world on one project because it can always wait for another day. I can hyperfocus on details that nobody else has time for - because time is money or so they believe. This is a special time in human history in the sense of having a world of information awaiting a search query. Reddit hasn't stomped out all of the independent forums on the internet, yet.

So how was the pie?     (what is rocket cracked?)

As for hobbies without mouths to feed:   I have a spinning wheel and a closet full of wool, but I suck at spinning haha.    I also have sheep skins in my freezer that I need to salt down.    

But instead of doing those things, you guys see the results of my fave past time.    (doom scrolling, lol?)
