potato biscuits
Quote from lil chick on January 27, 2026, 6:21 amMy son made us these and I was impressed that they need less fat than regular biscuits. They are soft and slightly sweet. He added a bit of garlic but plain might be more versatile (if you want the leftovers for breakfast).
1-1/4 cup flour
1 tablespoon baking powder
1 tsp salt
1 tablespoon sugar
1/8 cup butter
3/4 cup mashed potato
1 egg
1/3 cup cold water (other people might use milk here, but he didn't and they were fine)
Mix, knead, drop (I usually "cut in" butter when making biscuits, but I don't think he did. I think the recipe is very forgiving). (The original recipe also said you could roll out and cut the biscuits instead of drop, if desired)
450 degree oven, 15 minutes

Quote from lil chick on March 11, 2026, 5:04 amI was just reading over this post I did a few weeks ago (of my son's recipe) and a tablespoon of baking powder sounds like a lot.
When I make quick breads like biscuits I often use 3/4 of a teaspoon of baking SODA, and add a tablespoon or two of lemon juice. I personally do worry about baking powder and could it have a bad amount of aluminum? Sometimes I will also a a bit of baking powder (just because it works much better than baking soda and lemon juice.) ...but no where near a tablespoon...
I will probably make a batch of these soon and I will come back with my results.
