One of my points is if your ancestors ate it, there might be something about it that you need, and experimenting away from it might lead to trouble. Trouble that is hard to see in advance that will lead to suffering.

I have loads of friends and relatives who drink a lot and I do wonder about whether there is a connection to their desire to drink and the VA they are trying to cope with. I wonder if the beer belly is the place the VA goes when all of the alcohol sends VA packing out of the liver. And are the drinkers better off, than their teetotaler friend with a toxic liver?
Of course, sometimes the alcohol itself toasts the liver.
Personally, I find that when I try to live in the moment, and eat and drink what makes my mouth water, I end up with a little alcohol in my diet.
Some cultures took no alcohol, and their progeny should probably not either.

I thought I had a great idea, raising chickens ethically and responsibly for the eggs. In touch with the dirt and the sky! Eating bugs! Free-range proteins, fats, vitamins. Now I'm poisoned and so are my cats and kids and husband. I probably will now die a painful, early death. Not only that, I worked my ass off and gave up freedom, and etc.
Literally, I should have just adopted the menu my grandmother handed to me.
What I'm telling you is what my long road of food experimentation ended in disaster. YMMV
Yes unfortunately, I believe being not able to eat the food of your ancestors puts you in a very bad position! Hopefully being lowered VA will allow you to eventually add back wheat.
