the one-tomato sauce

I am on the slow boat, this might be an idea for those who are not on the purist version of vitamin A reduction.    And those with families.

Ok, maybe, like me, you grew up with spaghetti as being very important.   (perhaps due to commercials like at the bottom here?).   Tomatoes are actually a New World food and not and Old World food and full of all kinds of crazy stuff, especially lots of carotenes, but not limited to them.   Of course, now we are programmed and our families want spaghetti night.

This is a lower-vitamin A version of "Wednesday is Spaghetti Day" that might just satisfy the family without overloading them with vitamin A.   Really, I think tomato PASTE is one of the worst things out there.   But if you have ever made sauce, you would be surprised just how MANY tomatoes go into sauce.    Even sauce is a concentrate.

What I do is I buy those hot house tomatoes that come on the vine.   I leave them on the counter until they are ripe and no longer hard.   They should be at peak and not just cardboard (to make them vitamin A worthy!)   Then I carefully, finely chop JUST ONE.

There is probably some sort of meat involved in this recipe, for instance, meat balls.    Well, you get those meat balls going, and you add some chopped onion to the pan, crushed garlic and maybe a pinch of your fave Italian seasoning such as basil and oregano.    You've got some oil of your choice in the pan too.   Add your one chopped tomato.   Salt to taste, if desired add a tiny bit of sugar (this is an old-fashioned ingredient to sauce, you know, thought to balance the acid) and a tiny bit of ground cayenne if you feel wild.    Cover the pan because you don't want the ingredients to dry out, and you want your meat to cook through.       Simmer.

When serving your saucy meat over your pasta, grind on a little parmesan.

Ah, what a heartwarming ad! Also thanks for sharing your recipe. This minimalist approach to tomato sauce may just satisfy the appetite for fruity, tangy sauce.

Pizza bianca with some chopped or sliced tomato might be a good alternative too, if you want to skip the tomato sauce but still fancy some pizza. With anchovies and salami sounds good to me.
