what is the ideal bread

In the U.K. it seems white flour has to be fortified (with eg niacin, calcium, iron, thiamine and folic acid). I tried looking for unfortified white bread but it was wholemeal unfortified bread not white bread (and wholemeal bread has more of those nutrients naturally I think). I asked the Real Bread Campaign and they said there are some products manufactured outside the UK where U.K. flour fortification rules don’t apply that are imported and sold here. Examples include in store bakery items which are defrosted and rebaked here. You have to ask in the store. 
The label ‘organic’ does not mean that the bread has not been fortified  

Here is unfortified wholemeal bread (not white) 

Unfortified Flour, Unenriched Flour, Non-Additive Flour & Pure Flour
