Factors influencing likelihood of developing a choline deficiency on a low vA diet

I am eating 350g potato at each meal. These are the amounts of those veg I would have to eatper meal to replace those calories according to cronometer:
Parsnips: 420g

Cauliflower: 1.3 kgI would have to eat over 3 kg veg a day with anything other than parsnip and if I was physically able to actually eat all that I would actually be increasing my potassium intake.

I'm more about nutrients than I am calories. Having said that I'm about 2,000 calories for 65 kgs body weight. The need for potassium will go down a bit hopefully and you can begin eating for other nutrients.
