Factors influencing likelihood of developing a choline deficiency on a low vA diet

@rachel I think you were eating a lot of potatoes which had the potential to give you a lot of potassium. The choline from eggs will improve absorption of potassium and a friend did need to reduce his potassium supplement after a few weeks on eggs.

I hadn't considered too much potassium.  That would give me a real problem as I get nearly half my calories from potatoes and don't have any good options for substitutes since I don't tolerate any grains and with other veg I would have to eat a lot of bulk.  I've got to the point where I have v few food options.

@rachel you might begin to tolerate other foods now as you've been on the eggs for some time. Parsnips, swedes, celeriac and cauliflower being some options. It could also be you need some magnesium foods.

You can be getting a lot of potassium in diet but if cells not holding into it you can end up depleted.

@jaj how do you make sure cells are holding onto it?

Thanks @jaj I reread this thread and things are more clear to me, specifically the role that adequate choline plays.

I am working to introduce other foods for gut health etc but it doesn't work as a substitute for potatoes.  This is my problem -
I am eating 350g potato at each meal.  These are the amounts of those veg I would have to eatper meal to replace those calories according to cronometer:
Parsnips: 420g
Swede: 1kg
Celeriac: 1.1 kg
Cauliflower: 1.3 kg

I would have to eat over 3 kg veg a day with anything other than parsnip and if I was physically able to actually eat all that I would actually be increasing my potassium intake.
Attached are screen shots showing veg equal to one meals worth of potato and the amounts of potassium in those portions of veg.

@rachel Absorption improves with the eggs. I dont know exactly when for you. You will get more nutrients from less foods. I'm more about nutrients than I am calories. Having said that I'm about 2,000 calories for 65 kgs body weight. The need for potassium will go down a bit hopefully and you can begin eating for other nutrients.

I look forward to better absorption!  Currently I'm needing over 2000 calories a day and I'm only 54 kgs.  At the moment if I don't keep a good eye on calories I lose weght which I can't afford to do.  I don't like eating by prescription rather than appetite but I have to right now.  I'm right at the bottom of the normal weight range for my height.
It's a real pain, the amount of food I need - not to mention the expense!
I remember Grant saying he needs less food now and keep hoping I'll see the same thing happening.

@audrey that’s good to hear. My aim in writing this thread was to alert people to the possibility that this may be an issue. I believe choline deficiency has seriously affected my health and want to warn others of the possibility, so they don’t have to mess themselves up to learn it. Easier to prevent than cure.
