Rice and white corn are near zero, even the whole grains. Brown rice has a tiny bit more than white rice but still extremely small amounts, I don't think the difference is significant.
Durum wheat has significant levels of carotenoids, it's what makes it yellow instead of white. Durum wheat (whole or refined) and whole white wheat have significant levels of carotenoids. I think pasta is not appropriate, it's better to eat some other kind of white wheat noodle like those found in asian cuisine.
White potatoes, cassava, and refined white wheat are some additional near zero carotenoid starch sources. Probably some other refined grain products are also near zero, the whiter the product is the less carotenoids are in it. Most of the carotenoids are in those parts that are removed during the refining process.
Compare the whole wheat flour with the refined wheat flour, the colour is gone, the carotenoids are gone.

It's interesting to me that Rob Stuart went from one extreme to another, and is now on a mega-choline diet, even higher than what @andrew-b did for a while. Andrew, you were at 800 mg, right? Rob is now at 1400+ mg. Did he run into a choline deficiency I wonder?

If they are lucky, none of the poisons match up. They may still get into some new poisons, but it might take a little while before those poisons catch up with them.
In the same vein, when you flip your diet you might unknowingly have had a deficit of x, and now you are fulfilling x. Of course, over time you might end up low in y, (which your old diet had). But it will take a while to know.
