White beans

I think also that the dairy foods came in small amounts, often through the day rather than big servings.   Like milk-tea with meals, milk on the porridge, a bit of cheese a small glass of milk with a cookie.

With soluble fiber it's about frequency not quantity. We recycle bile non stop 24/7, so the more frequent it can be bound the better in terms of eliminating toxicity. Something I refuse to admit! And still struggle with my hormones because of it. I think eating 1/2 cup of beans once or twice a day will do the job, but it doesn't. It's helped a lot, but it isn't complete healing.

I still struggle to understand how this works. I understand that when you eat full meal with fat, protein and that soluble fiber together it will trigger bile release and the bile will bind that bile in the intestine and will transport that bile with poop. But but how can fiber itself alone without fat as in full meal trigger bile release and so bile detox? Dr.Smith is talking about this all the time that fiber alone triggers bile dump. But never cares to explain the mechanism. It makes no sense to me.. What triggers gallbladder contraction are bitter, spicy things and mainly fat not just fiber alone. Like for example I will take on empty stomach after ours of fasting psyllium husk powder in water and it will trigger "bile dump" how? That's why we know low fat diet can cause gallstones. Because with fat you eliminate the main bile release trigger. Fiber can't do that..

I don't know for sure if the beans removing toxins idea works or not.  But in the three years I have been eating beans I have lost extra fat on my body.  I do about 10 minutes of exercises almost every morning in addition to some walking or slow jogging each day.  So my exercise level is low.  It could be that the extra vitamin A my fat was holding is gone and that is why I am lean.

@eio or your overal calorie intake is lower because you eat clean diet lower in fat probably?

I knew that adding baking soda into soaking water the beans get softer. But I also knew that they recommend soaking in acidic stuff to lower antinutrients like phytic acid etc.. So this time I added apple cider vinegar instead of baking soda into the soaking water. Result was crazy hard beans even after 20 hours of soaking and 90 minutes of boiling hehe. So apparently acidic stuff prevents pectin in the beans getting soft. So baking soda next time again.. Btw is it normal that the water while cooking those black eyed peas gets almost black like coffee?

I don't really take Dr. G's word on the mechanism of things. Karen Hurd states we are constantly releasing and re-absorbing bile hence why if your gallbladder is blocked you can die. She said 20-72 times a day depending on your motility.

Here is some info from Karen:

"so that is all that fat underneath the skin is made out of triglycerides, they are a storage form of fat that's made from blood glucose so when you have too much blood glucose circulating in your bloodstream then your body will convert it into this fat called a triglyceride and then it will store it and it's typically stored just underneath the skin and then you have these you know these fatty deposits and they'll say look at my legs they look like you know marbled fat and well yeah that's just the way we fatten up animals too is we give them a lot of grain more than they need and grains are carbohydrates and so it's converted into triglycerols it's the same as triglycerides so what's the answer soluble fiber you have to eat the soluble fiber because the soluble fiber will carry out your bile what is bile made out of bile is made out of triglycerides so when the triglycerides in your bloodstream fall below a certain level it's usually 60 and below if they fall below 60 then your body says we don't have enough triglycerides to make new bile and she keeps eating these beans and throwing all the bile away we have to have some raw material to make bile of oh you know on those thighs down there she's got a lot of fat that we store in there you know and those little lipoma deposits and so what we're going to do is we're going to pull those and that's easily they just have those just release into the bloodstream and the liver gathers them up turns them into bile you eat more beans and you throw it away but that's the way you get rid of it will it happen in a week no and everybody wants it to happen in a week maybe a month they'll give it a month but after a month if this not cleared up well this is ridiculous it's just like guys how long did it take you to get here at least 20 years or however old you are you know before you start to notice those type of things it's just like you need to give it a little time to reverse and it means changing a lot of other things too because then you'll say well okay I'll eat beans but I'm still going to do my coffee and my sweets It's like okay wait we're not getting very far."

This one was about allergies:

"K: it takes a while you can't get over it in a day because you know when we say eat beans and first of all people say the beans are too high in histamine if you really do have a response to them then do this do the psyllium husk, it has no histamine and so you can do that but we say eat your beans three times a day that's excellent but you recycle your bile depending on the motility of the person 20 to 72 times a day so you eat beans three times a day good girl excellent well done well you carry it three out 20 times so the other 17 times you recycled it all and you say well I'll eat beans you know six times a day well that's good that's six out of 20 it's better than three out of 20 but what if you're one of the ones that recycle it 72 times a day woo we got a lot of eating of beans to go.

U: I think I healed so quickly because your directive was if you're awake eat beans and I was so sick that I was only passing out for two hours a night so I was eating beans 20 sometimes 22 hours a day and I think like my histamine got under control really quick because I was doing that for a you know eight months nine months where I was just oh I'm awake I would joke with my husband I felt like a ghost walking the house rattling the bowl with my beans you know I would just sit there eating my beans and people are like were you insane I'm like yeah I was.

K: but that is what healed you because you carried out the vast majority of your bile yeah whether that percentage you carried out 70% of it or you carried out 80% or 50% but it's a whole lot better than only carrying out 10%.

U: or three times a day or even six times a day if you really have a major allergy scenario going on you could be doing it you know all waking hours and it would probably like how long would it let's just say a person woke up and they were doing soluble fiber from the moment they woke up till the time they went to bed how long obviously how long is a piece of string each person's different but roughly let's say a person did that I did it for you know six nine months or whatever I was doing it for because I had so by the time I got to you I had so many issues from being in chronic inflammation and illness for three years before I met you and it took another two years to go into total remission with the hormones and the gut right in total so it was a 5year journey and the histamines were off the charts I would get heat rashes, hair was falling out part of my issue with sleep was histamine because I was just jacked all the time um you know so I look at my case and I'm like oh I can eat anything now I don't have food allergies anymore it's more choice that I don't take in dairy it's more choice that I don't eat certain things right but so many people can't get near them without having all sorts of skin rashes and stuff like that what would you say to somebody like give it six months of just really staying dedicated or?

K: yes six months it could happen a lot sooner though too I mean you could see a difference month it depends on how many recycling allergens you have how many years has this has been going on and so it is different it's just like you said how long is a piece of string you know it depends upon the person but if people are you know people will talk to me and they'll say I'm having an allergic reaction the first thing I'll say is every 20 minutes eat a tablespoon or two of beans every 20 minutes every 20 minutes because then you're going to carry out 100% of your bile and all of that cause whatever is causing the allergic reaction whether it's an antibiotic because antibiotics can cause an allergic reaction or if it's the corn tasseling in the field then we're going to be carrying that out at 100% And you can bring yourself out of a terrible, if you can't breathe, you're in anaphylactic shock, please go ahead and use your inhaler and give yourself the shot, don't die. Don't get so hardened that you say I have to make sure beans are going to save me, well beans won't save you if you're not breathing you know if you're dead you can't eat beans anymore ,so I mean sometimes we have to use these medical interventions because some people go into anaphylactic shock type of situations with allergies and then you just need to know beans need to be on the menu for me frequently. They don't have to be large amounts, just get down a few tablespoons, but just eat them very often. So you could bridge the gap while you're working on it with an antihistamine. Usually people take antihistamines on a regular basis because they don't take it then they break out in hives or whatever their reaction is, then they'll forget to take their antihistamine after a few weeks it's like oh I'm supposed to take the antihistamine or it's five hours later they remember because then they're starting to get the hives again it's just like I went five hours that I normally couldn't go and then pretty soon it's seven hours and then pretty soon it's 10 hours and then pretty soon it's like I haven't taken it in a week in fact I haven't taken it in months. You have to be miserable and scratching and got the hives everywhere and it's terrible you don't have to be."

@janelle525 Karen makes a lot of statements that are not true at all. ALl you have to do is to check it in chat GPT or with someone who actually knows biochemistry.

So Karen does the same thing as Dr.Smith is doing. She is right in some stuff like we need soluble fiber to detox properly, but she is also talking a lot of crazy nonsense that doesn't make nay sense.

For example

"what is bile made out of bile is made out of triglycerides "

That is completely false. Not to mention the other stuff.

Yes the body is producing bile all the time, BUT that bile is not released into the intestine all the time. That is complete nonsense and it is true only if you don't have gallbladder.

The main trigger for bile release(gallbladder contraction) is by hormone CCK- cholecystokinin and that hormone is triggered by fatty acids and to some degree by protein but not by fiber.

That's why I am asking what is the mechanism behind eating or taking fiber alone. Because like I said if you have gallbladder there is no constant bile release into the small intestine. It is like saying there is constant release of digestive enzymes from the pancreas into the small intestine even when there is not any food. Makes no sense at all.

Btw just to show how she doesn't understand biochemistry that much. She is all about reducing adrenaline with stopping recycling of hormones in bile. But she struggles to understand that her diet high in nuts, seeds, grains nad legumes is LOADED with copper and that copper pushes dopamine into Noradrenaline.

So on one hand she is trying to be more calm by eating a lot of fiber, but on the other hand she is overdosing on copper which we know is strong neurostimulant that increases adrenaline.

I think I am not far off when I say that she seems little crazy. Like most vegans are and the reason for that is exactly what I am talking about here. Unbalanced zinc/copper ratio in her body.. I know that she recommends some animal protein. But for that amount of copper from legumes, grains and nuts and seeds she is eating she would have to eat at least 500g of red meat to get enough zinc. Not some small portion of chicken or something like that..

If her knowledge and understanding was more complex she would tell you you need to balance all that copper from legumes with some zinc that will balance that high copper intake.. Not to mention she is recommending seeds and nuts which are just another load of antinutrients and copper and most importantly a lot of omega 6 fats.

I wouldn't be surprised if she thinks that PUFA fats from nuts and seeds is more healthy than saturated/monounsaturated fats from stuff like beef, dairy, olive oil etc..

SO like I said it is great that she is pushing soluble fiber to help detox stuff from the liver, but the other stuff is just bad and wrong.

@jiri

I asked chatgpt about what bile is made out of and it said cholesterol and lecithin and other things, and then how does the body make cholesterol this is the process:

  • Stored fat in your body is kept as triglycerides inside fat cells (adipocytes).

  • When your body needs energy, it breaks down those triglycerides into:

    • Glycerol

    • Fatty acids

Now, here’s where cholesterol comes in:

  • The body makes cholesterol mainly in the liver (and some in other cells) from a molecule called acetyl-CoA.

  • Fatty acids (from stored fat) can be broken down into acetyl-CoA through beta-oxidation.

  • That acetyl-CoA can then be used as a building block to synthesize cholesterol (via the multi-step mevalonate pathway).

So:
Indirectly — yes, cholesterol can be made from stored fat, because fat breakdown produces acetyl-CoA.
Directly — no, the body doesn’t just convert triglycerides straight into cholesterol.

In short:

Stored fat → fatty acids → acetyl-CoA → cholesterol (in the liver).

So yes in fact bile is made from triglycerides indirectly because it uses stored fat which is triglycerides. That's exactly the point she was making in the quote above.

And here is what it said about bile release:

🩺 1. The liver makes bile continuously

Your liver cells (hepatocytes) never stop producing bile — it’s part of normal metabolism. Bile flows through tiny ducts that join into the common hepatic duct.

🚪 2. The sphincter of Oddi regulates flow

At the end of the bile duct, before it empties into the small intestine, there’s a muscular valve called the sphincter of Oddi.

  • When you’re not eating, this sphincter is mostly closed, directing most bile backward into the gallbladder for storage.

  • But it’s not perfectly sealed — it relaxes slightly at times, and a small amount of bile leaks (“trickles”) into the small intestine.

💧 3. Why the trickle matters

This small, continuous flow serves several purposes:

  • It helps neutralize stomach acid that enters the small intestine even during fasting (since the stomach still secretes a bit of acid).

  • It maintains bile duct pressure and prevents stasis (bile sitting too long can form stones).

  • It allows some bile salts to keep cycling through the enterohepatic circulation — reabsorbed in the ileum and returned to the liver — which helps the liver conserve bile salts efficiently.

She doesn't recommend grains, and she isn't eating beans and nuts all day, it's portioned. Along with meat three times a day. And yes she has a whole other belief about saturated fat than everyone on the internet. I don't agree with her, but I got sick eating a lot of saturated fat and simple carbs and I will never go back to eating that much saturated fat.

Also if you believe that her protocol induces copper overload you'd have to explain how she has gotten the results she has with many people including the one who coined the term "the bean protocol", she went into remission from a serious autoimmune disease pounding beans all day for 2 yrs. She now eats them roughly three times a day in balanced meals and remains healthy and in remission.

@janelle525 I think the main reason why she is not in major trouble is because that fiber really does help fight estrogen dominance that is the result of high copper and low zinc and obviously she doesn't do anything stupid that would make her health worse like taking meds, drugs, stimulants, eating junk etc..

Also I think she never took birth control. If she did I think even high soluble fiber diet would not help much and she would end up with much more serious estrogen dominant/copper issues like so many females today..

But that part that bile is made out of triglycerides and if they are low the body can't make bile etc.. is simply nonsense.

You can have extremely low body fat and triglycerides in the blood and you can produce bile just fine.

Like I said she is used to speak to people who have no idea. So she can say whatever she wants even if it's complete bullshit and the audience will not say anything back because they don't know any better.

Same thing Dr.Smith he also never does any podcast or anything with someone who would fact check him. So he goes on and on and over time start to say absolutely ridiculous things.. Like copper is not essential element fro humans etc.. lol

This conversation is about a really important topic, I think.    I've learned a bunch so far about this miraculous thing I was missing out on.    Thank you both, Jiri and Janelle for posting all of this, both sides.

I think it is almost always true that everyone is getting something wrong (chat GPT too!) and even though Karen Hurd is an amazing hero she could be wrong about some things.   She went through college for her dietary degree and right there you know, LOL,  that she probably has status-quo ideas hammered in to her.   But not having the full story is the state of being a human being.    There is no fully-illustrated dictionary of health that we can just open up and read...and there never will be.

Often with time the *proof is in the pudding* and over time we will have a body of testimony here to help the process of learning.   Hypothesizing only goes so far.   There is no little CRT screen on the abdomen.    Questions like:  should we be taking this fiber really often?  Should we be taking it with fats?   Do bitter herbs help or do they add more toxins to get rid of?
