@tim-2 well there you go.. I can take psyllium it doesn't give me any serious issues like gas or signs of inflammation only slows down bowel movement a bit..

@jiri I have similar gut problems to you and I always tought that gluten is bad but homemade sourdough bread is the best carb source for me. I would have never guessed that before trying it.

It doesn't give me gas and other GI disconfort like other carb sources would.

@mattia Hm interesting. But I am done with pastry or any kind of wheat products. In my opinion modern wheat is very problematic. I am gluten/wheat free like 8 years and I have no good reason to start with it now..  

I used to buy spelt berries, grind them, sourdough them, and mix them with up with organic white flour (to lighten the loaf).  (you can even find organic white spelt, which would be ideal).  There are other ancient wheats that can be bought in berry form, kamut for example.  Rye might be the easiest to find.

I would season these loaves with a bit of honey.   (I also often put an egg or butter, but that could be skipped).  Salt.   They were VERY popular here!

A friend has given me some wheat berries, I'm hoping to get a sourdough culture going again. 

Bought some mushrooms, will be trying them this week with meals.

@jiri  I gave up wheat for 5yrs, using it again daily now, I don't think I ever had any issues with.  But like you said, probably best for you to avoid until your digestion is back to normal.

@orion I think that I will stay gluten and dairy free forever.. Products from modern wheat have nothing to do with traditional foods cooked from "natural" wheat 100 years a go.. Dairy is problematic due to hormone content like estrogens, IGF1 etc.. I think good to avoid if you don't want cancer... I am trying oats again. But I am not cooking them in water. Only soaking in egg whites and making pancake from that. It seems that it works better(I can eat this pancake with 100g of oats and 5 egg whites with much less bloat then when I was eating just 50g of cooked soaked and cooked oats.), because it is digested much more slowly so there in not huge amount of fermentable fiber at once like with soaked and cooked oats.. I also realized why I have always issues with constipation. Because I was never eating good amount of both types of fiber soluble and insolube.. Eating just insoluble or just soluble will cause constipation.. I hope that my microbiome and my gut will adjust to eating more fiber again. I feel like it is very important for detox and also for gut health..  

I just decided to stop egg whites for a while, because of the adevin thingy.  (binds to biotin)

I have gone back and forth with egg whites, but all the talk of B vities has me thinking that I've poisoned the family in multiple ways with eggs, (not just too much VA).

I'm not saying there aren't some people who should be gluten free for life.     But I was gluten-free (GF) and casein-free (CF) (except for butter, duh) for two years and it did nothing for me.  Got back on those things without any problem, either.  It was a nothing-burger for me, and a pain in the ass. 

At the time, I was a WAPF'er and an older WAPF'er told me that she thought her and her husband were BETTER on wheat.  It blew my mind at the time, but now I totally get it.

Strangely, I used to dream about wheat foods during my GF times!  hahaha... they say there is a morphine-like structure in there. 

As my mother says, if it tastes good, spit it out.  All plant foods especially !  🙂  But really, what we need are the plant foods that are the least good at killing us.  haha

And the nerves in my arm complain every time I get off  my raw milk.

@lil-chick avidin in egg whites is not a problem if they are cooked. I like egg whites. Great easy to digest protein source with good amount of B2.. I use it mainly for making pancakes...

wikipedia:  "When cooked, avidin is partially denatured and binding to biotin is reduced. However one study showed that 30-40% of the avidin activity was still present in the white after frying or boiling.[1] However, cooked egg whites are safer to consume.["

edited to add:  I'm not opposed to throwing one whole egg into a batch of pancakes or muffins

@lil-chick I think that avidin that is left can block or whatever biotin what is in the food you eat with those egg whites. So if I eat them with oats. They maybe cancel that biotin from the oats. But that doesn't mean it will cause biotin deficiency. It means that I will not get much of biotin from oats in that meal.. Anyway if we should consume retinol in some form. Egg yolks are by far the best source. I think if someone has no vit A issues and his main source of vit A are whole eggs it is completely fine. Even 5 eggs a day.. It is still around 1000iu and if you don't consume other high vit A foods. You will not run into issues by consuming under 1500iu a day.. I miss whole eggs..

I disagree , Eating 5 egg whites and 1 egg for 2 years eventually led me to issues , after consuming beef . Dont get me wrong egg whites are the best thing to consume during vitamin A detox ( selenium and B2) for detox pathways . But if you are consuming lot of meat with eggs , it might eventually overdo selenium in your body . I think one or two egg yolk max a day is enough . Low fat milk is another source of b2 . And It never gave me any detox symptoms . for a month or two consuming 5 egg whites a day is fine . But its shouldn't become a staple . A red flag there !
