Beans

I am trying legumes again. This time canned beans. Is there any concern about some heavy metals from the can? Some cans are covered in some type of plastic from the inside. Is that better or worse?

I don't think there is much of an issue with metals from cans anymore. There are probably some toxins from the plastic though. I eat baked beans so I drain most of the sauce off which hopefully minimizes any problematic substances.

@tim-2 ok I will find another brand of white beans.. 

I get gut issues from beans but not if I cook them properly. You need to get all of the white foamy residue out. I have changed my recipe to include totally draining the water away and replacing it several times when I cook them until the toxins are gone. @judy I am cooking my meat, homemade gelatin, rice etc.. If I start cooking also beans in pressure cooker. I will have no free time. I will be cooking all the time something hehe.. That's why I am trying canned beans. Because they are already cooked. So I just cook my meat, rice and add some beans from the can.. So far I don't have severe gas or bloating. So will see if it stay this way.. The only thing that I don't like so far is that weird feeling on my teeth after eating those beans. It is the same feeling like after eating spinach. So I assume it is oxalate related. I thought that beans are higher in lectins, but low in oxalates??

It might be the oxalates. Try my soaking and rinsing recipe just once and see if it goes away.  If so, you could cook the beans instead of the rice and have some variety. By the way, Dr. Robillard, who is a digestive health expert, recommends cooking larger quantities of starchy foods, like beans and rice, and freezing it in portions to prevent the formation of resistant starch. That way you don't have to cook every day.

@judy how can leaving the starches in the freezer PREVENT resistant starch. If people are leaving starches in fridge to INCREASE resistant starch? The lowest resistant starch will be after cooking when it still fresh and hot..

I guess freezing totally stops any changes. He is the author of the Fast Tract Digestion series of books and the founder of the Digestive Health Institute. If you regularly have digestive issues with resistant starches, it would be very easy to test and see how you react after freezing the foods. It would be an easy solution if it works.

@tim-2 Heh so I don't know why I even started with beans if they are high in pectin? If it gives me loose stool and gas and bloating it means they are just fermenting in me and the endotoxin from that is a lot of stress on the liver right? Some people would say the microbiome will adapt and some people will say that beans will give you always gas..

I'm very sensitive to all beans except the ones that have been soaked and drained until the toxins are completely gone. I never have any issues with digestion at all when I use my black bean recipe.
